This is a good way to use older squirrels that are tough.
I use a crock pot and cook the Squirrel until it is easily deboned
Debone the meat and shred
Mix with Monterey Jack and cream cheese,green chilies garlic and sautéed onions
Heat corn tortillas, I stick them in a fry day but just a couple of seconds to make them pliable
Stuff and roll
Place in a greased baking dish
Make a sauce from Sour cream, cream cheese and avocado salsa
pour the sauce over the Enciladas and bake at 350 until bubbly around the edges
Check for internal temperature and top with Monterey Jack cheese
Back in the oven to melt the cheese
Salt and other types of pepper as desired
You can taste the product as you go because the Squirrel is cooked trough already
