    I have been eating squirrels for 40 years! The best way I have found to prepare them, is to make dumplings!

    wife now pressure cooking them and makes bbq out of them

    May I please ask . . what kind of squirrel is that.
    Reason - -> I am familiar with what we called a "red squirrel" in Maine. They were a lot smaller than that,plus they tasted like spruce and fir sap. Pretty much the same color though.
    Then of course the normal ol' gray squirrel. I suspect that is what is in your pic but I have never seen them with a red belly. Down here the underside is white and the rest is gray except parts of the lower legs.
    We also have a "fox squirrel" down here but they are big,lots of different color variations,and highly illegal (endangered).
