    Venison Jerky Recipe

    I thought i would share my venison jerky recipe for those of you who are trying to clean out the freezer!


    Ground Venison Jerky
    5lbs Fine Ground Venison
    5 tsp garlic powder
    5 tsp liquid smoke mesquite
    5 tsp lite soy sauce
    5 tsp worcestershire sauce
    7 tsp coarse kosher salt
    5 tsp fresh cracked black pepper
    1 tsp pink curing salt
    1 cup cold water

    Combine all seasonings in a bowl and mix with the water. Once thoroughly mixed add the slurry to the ground venison and mix by hand. Start loading the seasoned meat into your jerky gun and lay out into strips on your dehydrator (The curing salt will turn the meat dark brown and begin firming up the meat so it’s best to immediately use the seasoned meat). Dry until desired consistency is reached.

    Dried jerky strips are best after they sit in a ziplock bag overnight.
