308 oal
I'm looking at load data for 308 winchester.
Max OAL is 2.810
Recommended is 2.800
To hit the middle of the cannelure is 2.713
A buddy of mine wants me to reload for his 308 He bought some "old" dies at an auction. He told me that he will buy the primes, powder, and the bullets (from Sage of course). So now I'm trying to figure out what depth to set them at.

What bullet are you using? The cannelure shouldn’t dictate your seating depth, you can use the COAL that the bullet manufacturer gives for that particular bullet, or measure the throat of your buddies rifle and adjust seating depth based on that.

AOL is determined by the reloading data you are using.
Every book for the same bullet can be different, and pressures were achieved by seating depth
What bullet and powder do you plan to use?

I have Hornady's ogive guage tools. And I checked his barrel.

Every day is a good day. Some are just better than others.

As long as you aren't loading to max, and want to seat to the cannelure, that is fine.
There is no need to load to the cannelure either. They are set and designed for 30-06, not 308 but you can seat at any length you like

A minimun col would be nice.

The hornady 9th edition says to load that bullet to 2.700”. Starting load of h4895 is 37.2gr and max load 44.0gr.

What did your comparator say the max OAL can be?

Trying to learn about OAL and why it's a pain in my back side. It would be great if they published a minimun and a maximun CMark
